Pineapple rice

Here's a simple pineapple rice recipe you can try at home

Ingredients:

2 cups cooked rice (preferably day-old, cold rice)

1 cup fresh pineapple chunks (you can use canned, but fresh tastes better)

1 medium onion (chopped)

2 cloves garlic (minced)

1 medium carrot (diced)

½ cup green peas (optional)

2 spring onions (sliced)

2 tablespoons soy sauce

1 tablespoon oyster sauce (optional, for depth)

1 teaspoon curry powder (for a little color and flavor)

2 tablespoons vegetable oil (or sesame oil for extra aroma)

Salt and pepper to taste

Optional: Cashew nuts or roasted groundnuts for crunch

Instructions:

1. Prep your rice: Make sure your rice is cold so it doesn’t get mushy.

2. Heat oil in a large pan or wok. Add garlic and onion, stir-fry till fragrant.

3. Add carrot and peas: stir-fry for 2–3 minutes until slightly tender.

4. Add pineapple chunks: stir quickly to release the sweet aroma.

5. Season with soy sauce, oyster sauce, curry powder, salt, and pepper. Mix well.

6. Add the rice: break up any clumps and stir-fry everything together for 4–5 minutes.

7. Finish with spring onions and nuts (if using). Toss well.

8. Serve hot with chicken, fish, or enjoy it on its own.

If you like, you can also hollow out a pineapple and serve the rice inside for a restaurant-style look.
