If you have ripe tomatoes and a bit of patience, you can make paste that tastes way better than anything canned.
What you need:
Fresh ripe tomatoes (preferably Roma, Plum or any fleshy type)
A little salt
Olive oil (optional but recommended)
Garlic or bay leaf (optional for depth of flavor)
Step 1: Wash & Prep
Rinse the tomatoes thoroughly.
Cut out the stem area and chop them into chunks, no need to dice perfectly.
Step 2: Soften the Tomatoes
Pour everything into a pot.
Add a pinch of salt.
Cook on low heat for 15–20 minutes until the tomatoes soften and release juice.
Give it a stir occasionally so nothing burns.
Step 3: Blend & Strain
Once soft, blend the tomatoes till smooth.
Then strain using a fine sieve, cheesecloth, or muslin cloth to remove seeds and skin.
This step is what gives the paste that smooth finish.
Step 4: Cook Down the Puree
Return the strained puree to the pot.
Now this part takes time because it has to be on low heat only.
Let it simmer gently and stir every few minutes.
You’ll notice it thickening gradually.
If you like extra flavor, you can add:
A splash of olive oil
One garlic clove
Or a bay leaf (remove it later)
Keep cooking till it looks like a thick, rich paste.
This can take 1 to 2 hours depending on quantity.
Store It Properly
Once it's thick enough, let it cool.
Storage options:
Option 1
Transfer into a clean jar and pour a thin layer of olive oil over it to seal the surface.
Option 2
Scoop into ice cube trays, freeze, then store in a sealed bag or container.
How
long can it last?
Fridge: up to 2 weeks (if oil sealed)
Freezer: 3–6 months easily

Ingredients
1½ cups all-purpose flour, plus 1 tbsp
1 tsp baking powder
¼ tsp salt
¾ cup (1½ sticks) unsalted butter, softened to room temperature
1 cup granulated sugar
2 large eggs, at room temperature
1½ tsp vanilla extract
½ cup whole milk or buttermilk, at room temperature
1 cup mini chocolate chips
Instructions
Preheat the oven to 350°F (175°C) and prepare a 9x5 inch loaf pan.
Combine the flour, baking powder, and salt in a bowl, reserving a tablespoon.
Cream butter and sugar.
Add eggs and vanilla extract.
Alternate adding dry ingredients and milk to the wet mixture.
Toss chocolate chips with the reserved flour.
Fold in the coated chocolate chips.
Pour into the pan and bake for 45–55 minutes.
Cool in the pan for 10 minutes, then transfer to a wire rack.
Slice, serve, and store leftovers in an airtight container.

For 3–4 servings:
300g fettuccine or spaghetti pasta
300g chicken breast (sliced or diced)
2 tablespoons butter
2 tablespoons vegetable or olive oil
3 cloves garlic (minced)
1 cup heavy cream or evaporated milk
½ cup grated Parmesan (or any melting cheese available)
½ teaspoon black pepper
½ teaspoon thyme or oregano
½ teaspoon salt (adjust to taste)
Fresh parsley or spring onions for garnish
Optional Nigerian twist:
Add sautéed bell peppers, suya spice, or use goat meat instead of chicken
Cooking Steps
1. Cook the Pasta
Boil pasta in salted water until soft.
Drain and set aside (reserve a little pasta water).
2. Cook the Chicken
Season chicken with salt, thyme, and pepper.
Heat oil and butter in a pan.
Fry chicken until golden and cooked through. Remove and set aside.
3. Make the Alfredo Sauce
In the same pan, sauté garlic for 30 seconds.
Pour in heavy cream (or milk).
Let it simmer gently for 2 minutes.

Ehuru (Calabash Nutmeg) which adds a nutty, slightly peppery aroma.
Uda (Negro Pepper) which gives a smoky, bitter-sweet flavor that balances the heat.
Uziza Seeds. Small, black seeds with a peppery kick.

2 tablespoons soy sauce

Preparation:

8. Combine. Add back the chicken and scrambled eggs, mix well until evenly combined.
9. Garnish. Sprinkle with chopped spring onions and serve hot.
